Pasta with chanterelles and tomato sauce
Ingredients
- Paccheri Pasta - 9.9 oz
- Pickled Chanterelles - 14.1 oz
- Passata Tomato Sauce - 14.1 oz
- Olive Oil - 1 fl oz
- Garlic - 2 cloves
- Dry White Wine - 3 fl oz
- Grated Pecorino Pepato Cheese - 3.5 oz
- Butter - 0.7 oz
- Parsley - to taste
- Salt - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
In a large pot, bring water to a boil with a good pinch of salt. Rinse and dry the chanterelles.
Step 3
Add the pasta to the boiling water and cook for 2 minutes less than indicated on the package.
Step 4
In a heavy-bottomed skillet, heat the olive oil and sauté 1–2 cloves of garlic for 1–2 minutes until fragrant.
Step 5
Add the chanterelles and sauté until golden.
Step 6
Pour in the white wine and let it evaporate for 2–3 minutes.
Step 7
Add the passata and simmer for about 5 minutes.
Step 8
At the end, add the butter and Parmesan.
Step 9
Drain the pasta, reserving a cup of the cooking water for the sauce.
Step 10
Add the cooked pasta to the chanterelles and mix, keeping it on the heat. If the sauce is too thick, add a little reserved pasta water. Remove the garlic cloves.
Step 11
Serve the pasta with chanterelles immediately, garnished with finely chopped parsley.
