Ingredients
- Water - to taste
- Spaghetti - 8.8 oz
- Cherry Tomatoes - 3.5 oz
- Arugula - 1.8 oz
- Olives - 4 tablespoons
- Olive Oil - to taste
- Salt - to taste
- Gomasio - to taste
Step by Step guide
Step 1
Place a pot of water on the stove and add salt to taste. Once it boils, add the spaghetti. Cook for 2 minutes less than the package instructions.
Step 2
Meanwhile, pour a little olive oil into a heated skillet and add the halved cherry tomatoes. Add the olives and sauté everything over low heat.
Step 3
Once the pasta is ready, drain the spaghetti but reserve one cup of the cooking liquid. Place the pasta in the skillet with the tomatoes, set over medium heat. Stir constantly, gradually adding the reserved water. There shouldn't be too much liquid, but the spaghetti should be easy to mix.
Step 4
After a minute, remove the pasta from the heat, plate it, garnish with arugula, and sprinkle with vegan parmesan alternative or gomasio.
