Pasta with Garlic, Scallops, and Arugula
Ingredients
- Angel Hair Pasta - 8.8 oz
- Sea urchin roe - 20 pieces
- Olive Oil - 5 fl oz
- Garlic - 2 cloves
- Dry White Wine - 3 tablespoons
- Arugula - 3.5 oz
- Meyer Lemon Juice - 1 tablespoon
- Cilantro - 0.9 oz
Step by Step guide
Step 1
Clean the scallops and dry them with a paper towel. Bring water to a boil in a pot, add the pasta, and cook. Drain the pasta and toss it with 1 tablespoon of oil.
Step 2
Meanwhile, heat 1 tablespoon of oil in a skillet, add the garlic, and sauté for a few seconds, but do not let it brown. Add the wine and lemon juice, then remove from heat.
Step 3
Preheat the grill and brush it with oil. Sprinkle salt on the scallops and cook for 1 minute on each side. Slightly warm the garlic mixture and add the arugula, cooking over medium heat for 1-2 minutes.
Step 4
Serve over the pasta and add the remaining oil and half of the chopped cilantro. Mix well. Divide the pasta among 4 plates, top with scallops, and sprinkle with cilantro.
