Pasta with Green Putanesca Sauce
Ingredients
- Salt - to taste
- Ground Black Pepper - to taste
- Olive Oil - ½ cup
- Spaghetti - 15.9 oz
- Anchovy fillet - 10 pieces
- Capers - 1.8 oz
- Pitted olives - 7.1 oz
- Minced garlic - 10 cloves
- Scallions - 0.9 oz
- Young Spinach "Belaya Dacha" - 10.6 oz
- Fresh basil leaves - 1.2 oz
- Chili Flakes - ½ teaspoon
Step by Step guide
Step 1
In a large pot, bring salted water to a boil over high heat. Add the pasta and cook until al dente, about 5-8 minutes. Drain, reserving 1 cup of the water for later use.
Step 2
While the pasta is cooking, heat ¼ cup of olive oil in a large skillet over high heat. Add the anchovies and capers, and cook for 3 minutes, stirring occasionally, until the capers turn brown.
Step 3
Add the remaining ¼ cup of oil, olives, garlic, green onions, and red pepper flakes, and continue to cook for 3-5 minutes, until the garlic turns golden.
Step 4
Add the spinach and sauté for 1-2 minutes. Then add the pasta and toss to combine. Drain the pasta if it seems too dry. Season with salt to taste. Mix in the basil leaves.
