Description
You can substitute regular onions with shallots, using two bulbs. Instead of regular tomatoes, you can use canned peeled plum tomatoes.
Ingredients
- Penne rigate - 12.7 oz
- Iwashi herring - 1 can
- Tomatoes - 7.1 oz
- Vegetable Oil - 1 fl oz
- Garlic - 2 cloves
- Onion - 1 head
- Oregano - to taste
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Place a pot of water on the stove, and when it boils, add salt and then drop the pasta into the boiling water. Cook until al dente.
Step 2
While the water for the pasta is boiling, heat oil in a skillet, crush two cloves of garlic and add them to the skillet. When the garlic becomes fragrant, remove it and sauté the chopped onion in the flavored oil until soft.
Step 3
Blanch the tomatoes in boiling water, peel them, and dice into medium-sized cubes. Add them to the onions and sauté for a couple of minutes to allow the tomatoes to release their juices without losing their shape.
Step 4
Then add the iwashi along with the oil from the can, mash with a spatula, and add oregano or Italian herbs, salt, and pepper to taste.
Step 5
Transfer the nearly cooked pasta to the skillet with the iwashi and mix well. If the sauce seems too thick, you can add a little water from the pasta.
