Description

You can choose any type of pasta: spaghetti, fusilli, bucatini (thick spaghetti with a hole).

Ingredients

  • Beef - 28.2 oz
  • Ham - 1.8 oz
  • Bacon - 1.8 oz
  • Passata Tomato Sauce - 3.5 oz
  • Lard - 1.8 oz
  • Tomato Puree - 7.1 oz
  • Onion - 1 piece
  • Garlic - 1 clove
  • Margarine - 1.8 oz
  • Olive Oil - 4 tablespoons
  • Red Grape Juice - 8 fl oz
  • Chopped Sage Leaves - 1 tablespoon
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Cut the ham and bacon into thin strips and roll them in parsley. Make several deep holes in the piece of meat with a thin knife, and use the same knife to stuff the meat with ham and bacon. Tie the meat with kitchen twine.

Step 2

Melt the fat or margarine in a pot along with the oil. Sear the meat on all sides, then add the chopped lard, onion, and garlic. Season with salt and pepper, reduce the heat to low, cover, and simmer for 45 minutes.

Step 3

Gradually add the red wine, waiting for it to evaporate each time. After about an hour, when the wine is finished, pour the tomato concentrate into the pot. Stir and simmer for 20 minutes.

Step 4

Gradually add the tomato puree, just like the wine. By the end of cooking, a dark thick sauce should form, sufficient for 300 grams of pasta. If there isn't enough liquid during the simmering, you can add boiling water gradually.

Step 5

Cook any pasta al dente, mix it with the resulting sauce, and if desired, sprinkle with grated cheese.
