Ingredients
- Pasta (corkscrew) - 1½ cups
- Pickled Chanterelles - 10.6 oz
- Garlic - 2 cloves
- Ground Black Pepper - ½ teaspoon
- Mint - 2 tablespoons
- Salt - a pinch
- Macadamia Nuts - to taste
- Oat flakes - 2 tablespoons
- Fresh basil leaves - ½ teaspoon
- Dried Rosemary - ½ teaspoon
Step by Step guide
Step 1
Cook the pasta according to the package instructions.
Step 2
Blend all the sauce ingredients until smooth, adding a little water: oat flakes, cashews, dried basil, dried oregano.
Step 3
Heat a little olive oil, add chopped garlic, and sauté until golden and fragrant.
Step 4
Add the chopped mushrooms and salt, and sauté over medium heat until the mushrooms are cooked.
Step 5
Add the prepared sauce, stir, and add about 0.5 cup of the water left from cooking the pasta, along with the pepper. Simmer for 2–3 minutes, stirring constantly. If needed, add more water. The sauce should be quite liquid; otherwise, the dish will be too dry.
Step 6
Add the cooked pasta and mix thoroughly. Then add the chopped mint, mix again, and serve.
