Description
The proportions can vary, as I cook by eye. If someone doesn't like garlic, it can be replaced with onion, and tofu can be substituted with feta or goat cheese.
Ingredients
- Pasta (corkscrew) - 5.3 oz
- Morels - 5.3 oz
- Crushed Tomatoes in Their Own Juice - 5.3 oz
- Herbed Tofu - 2.5 oz
- Vegetable Oil - to taste
- Garlic - 1 head
- Red Long Chili Peppers - to taste
- Herbes de Provence - to taste
- Fresh basil leaves - to taste
- Salt - to taste
Step by Step guide
Step 1
Fill a large pot with water, bring it to a boil, and add salt at a rate of 1 tablespoon of salt per 3 liters of water. Add the pasta and cook over medium heat for 5–12 minutes (the cooking time depends on the shape, but it is indicated on the package).
Step 2
Rinse the mushrooms, or soak them in hot water, then chop them.
Step 3
Meanwhile, pour a little vegetable oil into a skillet, crush the garlic using a garlic press, and add the spices.
Step 4
Cut the tofu into small cubes and sauté in the oil with the spices for 3–5 minutes, stirring.
Step 5
Then add the mushrooms and sauté over medium heat for 15 minutes, stirring occasionally.
Step 6
Add the tomatoes and simmer for about 10 more minutes, you can cover with a lid and stir as well.
Step 7
By this time, the pasta is ready, drain the water, and place it on a plate. Add the cooked mushrooms with tofu.
