Ingredients
- Pasta (corkscrew) - 3.5 oz
- Olives stuffed with lemon - 1.8 oz
- Pistachios - 1.1 oz
- Olive Oil - 4 tablespoons
- Grated Pecorino Pepato Cheese - to taste
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Cut the olives in half. Chop the shelled pistachios. In a skillet, heat 2 tablespoons of oil and sauté the olives with the pistachios. Sauté for 7–10 minutes, stirring constantly.
Step 2
Start boiling the pasta. When the pasta is cooked, drain it in a colander. Do not discard the water; take 2–3 tablespoons and pour it over the nuts. Once the liquid evaporates, remove from heat.
Step 3
Add the pasta to the mixture and add the oil, mixing well. Serve, sprinkled with Parmesan.
