Pasta with porcini mushrooms
Ingredients
- Fettuccine Pasta - 8.8 oz
- Porcini Mushrooms - 8.8 oz
- Onion - 1 head
- Garlic - 2 cloves
- Parsley - 1 bunch
- Lemon - ½ pieces
- Cream 22% - 8.8 oz
- Butter - 1.8 oz
- Olive Oil - 4 spoons
- Salt - to taste
- Ground Black Pepper - 1 tablespoon
Step by Step guide
Step 1
Fresh white mushrooms (can be substituted with frozen ones) are NOT washed!!! Instead, wipe them with a paper towel, which can be slightly damp, or clean them with a knife, removing any dirt. Chop them into medium-sized pieces. Dice the onion and finely chop the garlic.
Step 2
Prepare the water for the pasta: bring it to a boil, add salt, and stir in 2 tablespoons of olive oil.
Step 3
In a deep skillet, melt the butter together with the olive oil, then sauté the onion and garlic until fragrant, making sure they don't burn. Add the white mushrooms and sauté for about 5–7 minutes, then pour in the cream and simmer on low heat for another 3–4 minutes.
Step 4
Cook the pasta until al dente, then drain it in a colander, reserving a bit of the cooking water (about 100 ml).
Step 5
Add the fettuccine to the skillet, gently toss the pasta, add the remaining water, chopped parsley, juice of half a lemon, freshly ground pepper, and let it sit for 2 minutes on low heat. It's best served in a deep, warm plate.
