Pasta with Puttanesca Sauce
Ingredients
- Spaghetti - 8.1 oz
- Baking Tomatoes - 13 fl oz
- Sugar - 1 teaspoon
- Parsley - 2.8 oz
- Garlic - 4 cloves
- Green peppercorns - to taste
- Italian chopped parsley - 1 teaspoon
- Olive Oil - 1 cup
- Anchovy fillet - 1 teaspoon
- Olives stuffed with lemon - 4 tablespoons
- Capers - 1 tablespoon
- Scallions - 1 stalk
- Rosé Dry Wine - 3 fl oz
- Grated Pecorino Pepato Cheese - to taste
- Fresh basil leaves - to taste
Step by Step guide
Step 1
Sauté the onion, garlic, and pepper in olive oil for about 2 minutes or until fragrant.
Step 2
Add the tomatoes and half of the juice from the can, sugar, wine, fresh parsley, olives, capers, anchovy paste (or anchovies), and Italian seasoning.
Step 3
Bring to a boil and simmer for about 25 minutes, stirring occasionally and adding tomato juice if it evaporates. Cut large pieces of tomatoes while maintaining a firm consistency.
Step 4
While the ingredients are simmering, cook the spaghetti and drain the water. Pour the sauce over the pasta and mix well. Sprinkle with parmesan and fresh basil on top.
