Description
You can sprinkle the pasta with crushed amaretti cookies — their flavor pairs wonderfully with sage.
Ingredients
- Paccheri Pasta - 8.5 oz
- Butter - 2.1 oz
- Chopped Sage Leaves - 15 pieces
- Parmesan Cheese - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Divide the butter into three portions, placing one of them in the refrigerator.
Step 2
Pluck the leaves from the sage down to the base.
Step 3
Cook the pasta in a large pot of boiling salted water for exactly one minute less than the package instructions indicate (that is, rather until it reaches a state of "duro" than "al dente").
Step 4
While the pasta is boiling, melt one part of the butter in a skillet, add the sage, and sauté it without allowing it to brown — the sage should remain dark green.
Step 5
Add the second portion of oil to the skillet, melt it, but do not let it boil or bubble.
Step 6
Pour a little of the water used to cook the pasta into the skillet. Stir vigorously until it reaches an emulsion.
Step 7
Add the pasta to the skillet and mix well with the oil.
Step 8
Leave on the heat for another minute, allowing the pasta to absorb the oil and the aroma of the sage.
Step 9
Remove the skillet from the heat and vigorously fold the remaining portion of cold butter into the pasta using upward motions.
Step 10
Once the butter has melted, sprinkle the pasta with freshly ground black pepper, plate it, and serve with Parmesan cheese.
