Description

The pasta will taste better if the zucchini is sautéed in butter. Cheese can be replaced with mascarpone; in this case, it should be added to the sauce (which is blended into a puree). Alternatively, you can skip the cheese altogether, and the pasta will not lose any flavor. You can also add cream to the pasta. The calorie content of the finished dish according to the recipe without the additional ingredients mentioned above is 125 kcal/100 grams.

Ingredients

  • Pasta (corkscrew) - 2.1 oz
  • Courgette - 7.1 oz
  • Green Peas - 2.1 oz
  • Salmon - 4.2 oz
  • Dry White Wine - 1 fl oz
  • Garlic - 1 head
  • Dill - 0.4 oz
  • Parmesan Cheese - 0.7 oz
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Place a pot of salted water on the stove. While the water is boiling, chop the zucchini and add it to the skillet along with the green peas and garlic. Season with salt and pepper. Pour in the wine. Simmer until the zucchini is tender (about 5 minutes).

Step 2

Add the pasta to the pot and cook until al dente (a couple of minutes less than indicated on the package).

Step 3

Transfer half of the sauce from the skillet to a blender and blend until smooth; set the other half aside on a plate.

Step 4

Add the salmon to the skillet and sauté for a few minutes. Add the pasta and the sauce from the blender. Mix and heat for a couple of minutes.

Step 5

Serve the pasta with salmon on a plate, top with the remaining half of the sauce (not blended), and sprinkle with parmesan and dill.
