Ingredients
- Sausages - 6 pieces
- Olive Oil - 1 tablespoon
- Spanish onions - 1 head
- Garlic - 3 cloves
- Mild Chili Spice - ½ teaspoon
- Fresh Mushrooms - 10.6 oz
- Black Cumin (Cumin) - 1 tablespoon
- Baking Tomatoes - 28.2 oz
- Penne rigate - 17.6 oz
- Grated Pecorino Pepato Cheese - to taste
- Salt - to taste
Step by Step guide
Step 1
Cut the sausage casings and remove the filling.
Step 2
Heat olive oil in a large skillet over medium heat and sauté the finely chopped onion for 3-4 minutes. Add the minced garlic, chili, sliced mushrooms, and sausage filling in small pieces. Fry over high heat, stirring actively to break up the meat lumps for about 4-5 minutes until the filling is browned. Stir and fry for 10 minutes, removing excess fat if necessary.
Step 3
Add the tomatoes and chopped cumin and bring the sauce to a boil. Cover and cook over medium heat for 20 minutes, stirring occasionally.
Step 4
Meanwhile, cook the pasta in a large pot of boiling water. Drain and add the sauce. Mix well and sprinkle with Parmesan.
