Ingredients
- Fresh Spinach Leaves - 2 cups
- Pasta - 3 oz
- Tofu - 3 oz
- Onion - 1 head
- Minced garlic - 3 cloves
- Vegetable Oil - 1 tablespoon
- Ground red pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Cook the pasta according to the package instructions, leaving it slightly undercooked.
Step 2
Wash and clean the spinach and steam it with a small amount of water for 4 minutes in the microwave.
Step 3
Once the spinach is cooked, blend it and mix with water. It should form a paste with a watery texture.
Step 4
Heat the oil in a large non-stick skillet. When the oil is hot, add the minced garlic. When the garlic is golden, add the onion and sauté until golden brown.
Step 5
Add the tofu and fry until the tofu changes color. Add the red pepper.
Step 6
Stir. Then add the spinach paste and season with salt.
Step 7
When the water from the spinach evaporates, add the pasta and finish cooking.
