Pasta with Tomato Sauce, Olives, and Capers
Ingredients
- Pasta (corkscrew) - 14.1 oz
- Baking Tomatoes - 17.6 oz
- Onion - 1 piece
- Garlic - 3 cloves
- Thyme - 2 sprigs
- Fresh basil leaves - 1 sprig
- Olives stuffed with lemon - 10 pieces
- Capers - 1 tablespoon
- Lemon - 1 piece
- Ground Black Pepper - to taste
- Salt - to taste
- Parmesan Cheese - to taste
Step by Step guide
Step 1
Finely chop the onion and garlic, and sauté in olive oil until the onion becomes translucent.
Step 2
Chop the canned tomatoes, peeled and in their own juice, into small pieces and add them to the onion and garlic. Remove the thyme and basil from their stems and add them to the onion, garlic, and tomatoes (if fresh thyme and basil are not available, you can use two teaspoons of a 'Herbes de Provence' spice mix).
Step 3
Also add pepper, salt, the remaining tomato juice from the tomatoes, and simmer everything on low heat for about 20 minutes, stirring occasionally.
Step 4
Cook the pasta.
Step 5
When the sauce is ready, add the pasta, halved olives, capers, and grate the zest of half a lemon into it.
Step 6
Mix everything well and let it sit for 5 minutes.
Step 7
Serve the pasta, sprinkled with Parmesan.
