Pasta with Tomatoes and Basil
Ingredients
- Penne rigate - 2 lbs
- Tomatoes - 4 pieces
- Garlic - 0.1 oz
- Baking Tomatoes - 2 pieces
- Sugar - 4 tablespoons
- Tom Yum Chili Paste - 0.2 oz
- Basil - 1.8 oz
- Spiced Tomato Juice - 5 fl oz
- Parmesan Cheese - to taste
- Olive Oil - 1 fl oz
Step by Step guide
Step 1
Cook the pasta (any type is fine, not necessarily penne, spaghetti can also be used) until al dente. Drain the water and add olive oil to prevent sticking.
Step 2
Peel the tomatoes by pouring boiling water over them for a couple of minutes. Cut the peeled tomatoes into cubes, leaving the seeds inside.
Step 3
Chop the garlic and sauté it in heated olive oil in a skillet until fragrant.
Step 4
Add the tomatoes and simmer over medium heat, stirring for 5–7 minutes.
Step 5
Add the canned tomatoes, cutting them in half first. Pour the juice from the can into the skillet and slightly reduce the heat.
Step 6
Add the Thai spice mix, tomato juice (100 ml), and sugar. Stir and simmer for another 5–7 minutes.
Step 7
Generously sprinkle with basil and simmer for another 5–7 minutes.
Step 8
At your discretion: either add the cooked pasta to the tomato sauce and sauté for a couple of minutes, or pour the sauce over the pasta.
Step 9
Be sure to serve with Parmesan!
