Pasta with Tomatoes and Beans
Ingredients
- Extra virgin olive oil - 2 tablespoons
- Onion - 1 head
- Garlic - 2 cloves
- Canned tomatoes - 12.3 oz
- Sugar - a pinch
- Salt - to taste
- Ground Black Pepper - to taste
- Canned Beans - 7.8 oz
- Sage leaves - 4 pieces
- Pasta - 10.6 oz
- Grated Parmesan cheese - 1.1 oz
Step by Step guide
Step 1
In a large skillet over medium heat, heat the olive oil and sauté the onion, stirring occasionally, for 5 minutes. Add the garlic and stir for 30 seconds.
Step 2
Pour in the tomatoes along with their juice and add a pinch of sugar. Slightly increase the heat and continue to cook, stirring, until the sauce comes to a boil. Reduce the heat and continue to cook for 15-20 minutes, stirring and pressing the tomatoes with a spoon until they turn into a thick sauce. Add the beans, herbs, and season with salt and pepper to taste.
Step 3
In a pot of boiling salted water, cook the pasta until al dente according to the package instructions.
Step 4
When the pasta is almost ready, check the sauce – it should not be too thick. If necessary, add ¼ cup of pasta water and stir. Drain the pasta, mix it with the sauce, and serve with grated cheese.
