Ingredients

  • Farfalle Pasta - 14.1 oz
  • Olive Oil - 2 tablespoons
  • Eggplant - 1 piece
  • Garlic - 2 cloves
  • Sugar - a pinch
  • Tomatoes - 8 pieces
  • Capers - 2 tablespoons
  • Chopped Parsley - ¼ cup

Step by Step guide

Step 1

Bring a pot of salted water to a boil. Add the pasta and cook according to the package instructions.

Step 2

Meanwhile, heat the oil in a skillet and sauté the eggplant for 5 minutes. Add the spices, garlic, sugar, and sauté for another 2 minutes until the garlic is soft.

Step 3

Drain the pasta, add the tomatoes, capers, eggplant with garlic, and mix well. Add spices to taste.
