- Olive Oil - 1 teaspoon
- Onion - 1 head
- Celery stalk - 2 stalks
- Carrot - 2 pieces
- Leek - 1 head
- Bell pepper - 2 pieces
- Canned tomatoes - 28.2 oz
- Powdered Sugar - 1 tablespoon
- Balsamic Vinegar - 1 tablespoon
- Farfalle Pasta - 10.6 oz
- Grated Parmesan cheese - to taste
- Arugula - to taste
- Garlic - to taste
Step by Step guide
Step 1
Heat the oil in a non-stick pot and lightly sauté the onion, celery, carrot, and leek for 20 minutes. Add the bell pepper and cook for another 10 minutes, then add the tomatoes, sugar, and vinegar. Simmer for at least another 20 minutes (the longer, the better).
Step 2
Cook the pasta according to the package instructions. Meanwhile, blend the sauce in a food processor until smooth, adding spices to taste.
Step 3
Drain the pasta, mix it with the sauce. Serve topped with grated cheese and arugula.
