- Courgette - 2 lbs
- Lemon - 1 piece
- Pasta (corkscrew) - 17.6 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Cheese Spread - 7.1 oz
- Vegetable Oil - 7 fl oz
Step by Step guide
Step 1
Preheat the oven to 200–446°F. Grease two baking sheets with oil and lay out the sliced zucchini. Season with salt and pepper. Place in the oven for 25–30 minutes, occasionally turning the baking sheets.
Step 2
In a pot of boiling salted water, cook the pasta until al dente.
Step 3
Add lemon zest and zucchini to the pasta and mix well.
Step 4
Serve with grated cheese.
