- Olive Oil - 2 tablespoons
- Young zucchini - 2 lbs
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Lemon - 1 piece
- Green Tagliatelle Pasta - 17.6 oz
- Ricotta cheese - ½ cup
Step by Step guide
Step 1
Preheat the oven to 446°F. Grease 2 baking sheets with oil and lay out thinly sliced zucchini in a single layer. Brush with olive oil, season with salt and pepper. Bake in the oven until tender and golden, about 25–30 minutes, occasionally turning the baking sheets.
Step 2
Meanwhile, in a large pot of boiling salted water, cook the pasta until al dente. Drain.
Step 3
Add olive oil, lemon zest, and zucchini to the pasta. Mix well and serve with ricotta.
