Ingredients
- Green Peas - 10.6 oz
- Asparagus - 3.5 oz
- Mixed salad greens - 1.8 oz
- Mint - 1.8 oz
- Sugar - 1 tablespoon
- Apple Cider Vinegar - 4 spoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Boil the green peas and asparagus in salted water for three minutes, then drain in a colander and cool in ice water. Reserve some of the broth from the peas and asparagus.
Step 2
In a blender, combine the pea water (4 teaspoons), an ice cube (to cool down the pea water), sugar, salt, ground black pepper, mint leaves, and apple cider vinegar to make a green sauce.
Step 3
On a plate, arrange salad leaves (arugula, corn salad, watercress — anything you like), asparagus, and sprinkle with green peas. Dress with sauce and serve. If your hand happens to reach for adding some Parma ham or thin slices of cold lamb to this salad — don't deny yourself that desire.
