Description

Ingredients
- Water - 10 fl oz
- Sugar - 1 teaspoon
- Dry yeast - 1½ teaspoons
- Salt - 1½ teaspoons
- Vegetable Oil - 3 tablespoons
- Wheat Flour - 3½ cups
- Pea shoots - 2 cups
- Onion - 3 heads
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Rinse the peas, soak for 1–2 hours, drain the water, add fresh water (1–1.5 liters), and cook until tender.
Step 2
Add salt to taste.
Step 3
Chop the onion and sauté in vegetable oil until golden brown. If necessary, mash the peas with a potato masher, add the sautéed onion, and ground black pepper.
Step 4
To prepare the dough, add sugar and dry yeast to warm water, and let it sit for 5–7 minutes to activate.
Step 5
Add salt, vegetable oil, and sifted flour, and knead the dough. Let the dough rise for 1.5 hours, during which time it should be punched down twice.
Step 6
Divide the dough into equal balls the size of tangerines. Roll out with a rolling pin, place 3–4 teaspoons of filling, and pinch the edges.
Step 7
Cook the pies over medium heat in sufficient vegetable oil.
Step 8
Place the finished pies on a paper towel to absorb excess vegetable oil.
