Ingredients
- Garlic - 3 cloves
- Butter - 0.7 oz
- Ground Black Pepper - to taste
- Salt - to taste
- Water - 50 fl oz
- Bay leaf - to taste
- Dried parsnip - to taste
- Pea shoots - 10.6 oz
- Pork fat - 3.5 oz
- Onion - 1 piece
Step by Step guide
Step 1
Soak 300 grams of split peas in cold water for 5–6 hours.
Step 2
Rinse the peas under running water.
Step 3
Place them in a 1.8-liter ceramic pot and add water to cover the peas by about 4 fingers.
Step 4
Put the pot in a cold oven. Turn on the oven and set the temperature to 446°F. Bring the water in the pot to a boil, add salt. Let the porridge cook uncovered for 2 hours, stirring every 15 minutes.
Step 5
Cut the pork fat into cubes and fry in a pan until crispy; add the chopped onion and mix into the porridge after 1.5 hours of cooking, stirring well.
Step 6
15 minutes before it's done, add bay leaf, ground black pepper, dried parsley, and garlic.
Step 7
Serve the porridge in individual plates, adding a piece of butter or 2–3 teaspoons of cream.
