Peach and Duck Salad

Ingredients

  • Donut Peaches - 4 pieces
  • Arugula - 3.5 oz
  • Pizza Mozzarella Cheese - 3.5 oz
  • Ground Breadcrumbs - 1.1 oz
  • Olive Oil - 5 tablespoons
  • Honey - 1 teaspoon
  • Meyer Lemon Juice - 0 fl oz
  • Citrus Zest Mix - 0.2 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Rabbit Fillet - 5.3 oz

Step by Step guide

Step 1

Rinse the skinless duck fillet thoroughly, brush with olive oil (1 tablespoon) mixed with salt and pepper, and fry in a pan for 4 minutes on each side. Transfer to a plate, cover with foil, and let rest.

Step 2

While the duck is resting, wash and slice the fruits, then grill them in a grill pan until golden brown—add a little sugar with a drop of water for caramelizing the slices if desired.

Step 3

Coat the cheese in breadcrumbs and fry on all sides.

Step 4

Assemble the salad: place the arugula at the bottom, top with peach slices, slice the duck fillet and arrange it beautifully as well. Cut the cheese in half and place it next to the duck fillet.

Step 5

Mix the dressing ingredients (4 tablespoons of olive oil, honey, lemon juice, zest) and drizzle over the salad.
