Description

Pearl Pork is named for the white color of the rice casing of the meatballs.

Ingredients

  • Bacon - 5.3 oz
  • Pork Mince - 2 lbs
  • Dried Squid - 0.4 oz
  • Scallions - 0.4 oz
  • Ginger - 1.8 oz
  • Corn Flour for Polenta - 2 spoons
  • Soy Sauce - 1 fl oz
  • Sherry - 2 spoons
  • Sesame Oil - 1 tablespoon
  • Peanut Butter - 1 fl oz
  • Chicken Egg - 1 piece
  • Boiled White Round Rice - 10.6 oz
  • Sugar - 1 tablespoon
  • Salt - 1 tablespoon
  • White Pepper (whole) - a pinch

Step by Step guide

Step 1

Finely chop the bacon and combine it in a deep bowl with the ground pork, beaten egg, cornmeal (previously dissolved in two tablespoons of water), dried shrimp (which should be soaked in a small amount of water for a few minutes and then finely chopped), finely chopped green onions, sherry, soy sauce, sugar, sesame oil, peanut oil, white pepper, and salt. You can mix it with your hands (wearing gloves) or with a spatula, gradually achieving a homogeneous, slightly liquid consistency for the filling. Place the filling in the refrigerator.

Step 2

Rinse the rice with water and let it soak for an hour. After that, drain the excess water and let the rice dry in a colander.

Step 3

Spread the rice in a thin layer on parchment paper. Take the minced meat, shape it into small balls, and roll them in the rice until they are completely coated.

Step 4

Place the balls in a steamer and cook them for twenty minutes.
