Penne in Spicy Tomato Sauce with Sausages
Ingredients
- Pork Skewers - 14.1 oz
- Spanish onions - 1 head
- Olive Oil - 1 tablespoon
- Garlic - 2 cloves
- Mild Chili Spice - 1 piece
- Rosé Dry Wine - 5 fl oz
- Brown Sugar - a pinch
- Crushed Tomatoes in Their Own Juice - 14.1 oz
- Penne rigate - 14.1 oz
- Parsley - 1 bunch
- Parmesan Cheese - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
Place the sausages on a baking sheet and roast for 15–20 minutes until cooked. Transfer to a cutting board and slice diagonally into small pieces.
Step 3
In a skillet, sauté the finely chopped onion in olive oil until soft. Season with salt and add the minced garlic and finely chopped chili, sauté for 1 minute.
Step 4
Add the sausages and wine. Turn up the heat and cook for a few minutes. Add the tomatoes and sugar, bring to a boil, reduce the heat, and simmer for 20 minutes, stirring until the sauce thickens. Season with salt and pepper.
Step 5
Meanwhile, cook the pasta in boiling salted water until al dente. Drain.
Step 6
Divide the pasta among plates and top with the sauce. Sprinkle with parsley and shaved Parmesan.
