Penne with Bell Pepper Sauce
Ingredients
- Penne rigate - 8.8 oz
- Orange Bell Peppers - 3 pieces
- Pistachios - 1.8 oz
- Olive Oil - 5 tablespoons
- Garlic - 3 cloves
- Onion - 1 piece
- Cream - 2 fl oz
- Ground Black Pepper - to taste
- Salt - to taste
- Fresh basil leaves - to taste
Step by Step guide
Step 1
Preheat the oven to 356°F. Place the peppers on a baking sheet. Roast for about 20 minutes, until they are charred.
Step 2
Toast the pine nuts in a clean, dry skillet, stirring constantly. Do not over-toast.
Step 3
Finely chop the onion and garlic, and sauté them in olive oil.
Step 4
Remove the seeds from the roasted peppers.
Step 5
Blend the roasted vegetables, pine nuts, and 2 tablespoons of olive oil until smooth.
Step 6
Pour the mixture into the skillet with the onion and garlic.
Step 7
Add the cream, salt, pepper, basil (or your favorite dried herbs).
Step 8
Let it simmer for 5 minutes. The sauce is ready.
Step 9
Cook the pasta and combine it with the sauce.
