Ingredients
- Onion - 2.8 oz
- Minced garlic - 1 clove
- Olive Oil - 1 tablespoon
- Pumpkin puree - 4.2 oz
- Vegetable Broth - 1 cup
- Water - ½ cup
- Soy Milk - 2 tablespoons
- Nutmeg - ½ teaspoon
- Penne Pasta - 8.8 oz
- Chopped Parsley - 7.4 oz
Step by Step guide
Step 1
In a large deep skillet, sauté the onion and garlic in vegetable oil over medium heat until they soften and become golden. The onion and garlic should not burn.
Step 2
Add the pumpkin puree, broth, soy milk, nutmeg, and water. Season with salt and pepper to taste. Simmer the sauce over low heat, stirring occasionally, for 10 minutes.
Step 3
Meanwhile, cook the pasta until al dente, about 8 minutes. Drain the pasta and transfer it to the skillet with the sauce. Reserve 1 cup of the pasta water and set aside. Simmer, stirring, for 5-20 minutes. If necessary, add the reserved pasta water to the skillet to make the sauce more liquid. The cooked pasta should be fully coated with the sauce. Garnish with parsley.
