Penne with radicchio, blue cheese, and walnuts
Ingredients
- Butter - 2 teaspoons
- Spanish onions - 4.2 oz
- Radicchio Salad - 4.9 oz
- Chicken Broth - ¼ cup
- Milk - ¼ cup
- Cream - 1 fl oz
- Penne rigate - 8.1 oz
- Chopped almonds - 1.1 oz
- Blue Cheese - 3.9 oz
- White Pepper (whole) - to taste
- Salt - to taste
Step by Step guide
Step 1
Melt the butter in a large skillet. Add the thinly sliced onion and sauté for 2–5 minutes until softened. Add the chopped radicchio and chicken broth. Cook for 2 minutes.
Step 2
Add the milk and cream and cook for another minute. Set aside.
Step 3
Cook the pasta in boiling salted water until tender. Drain and add to the prepared cream mixture. Stir in the walnuts and cheese and heat for about 5 minutes until the cheese melts and the consistency becomes creamy.
Step 4
Season with salt and pepper and serve immediately.
