Penne with Zucchini and Mozzarella
Ingredients
- Penne rigate - 12.3 oz
- Courgette - 3 pieces
- Garlic - 2 cloves
- Olive Oil - 6 tablespoons
- Melted Cheese - 8.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cook the pasta al dente in salted water (al dente pasta is slightly firm to the bite).
Step 2
Wash the zucchini and slice it into rounds.
Step 3
In a deep skillet, heat the olive oil and sauté the garlic until golden (do not overcook it!).
Step 4
Add the zucchini to the skillet, season with salt, and simmer over low heat until golden.
Step 5
Cut the mozzarella into small cubes.
Step 6
When the pasta is almost ready, add the mozzarella cubes to the zucchini and keep on the heat until they melt (but be careful not to let the cheese bake).
Step 7
Drain the pasta and place it on top of the zucchini.
Step 8
Sprinkle with ground black pepper and serve immediately.
