- Steaks - 6 pieces
- French fries - 3 lbs
- Campbell's Beef Broth - 10 fl oz
- Cognac - 5 fl oz
- Port Wine - 7 fl oz
- Vegetable Oil - 3 tablespoons
- Green peppercorns - 2.8 oz
- Ground Black Pepper - a pinch
- Salt - to taste
Step by Step guide
Step 1
Heat the frying oil to 150°C.
Step 2
Immerse the potatoes for 5 minutes, then remove and let cool.
Step 3
Coat the steaks with crushed pepper, gently pressing with your hand to make it stick to the meat.
Step 4
Sear the steaks in a skillet for 3-8 minutes on each side to your desired doneness.
Step 5
Remove the fat from the skillet and heat it over high heat.
Step 6
Pour in the cognac, flambé, and reduce by 2/3. Add the port wine and reduce by 2/3 until syrupy.
Step 7
Pour in the broth and reduce by half. Season with salt and pepper to taste.
Step 8
Place the peppered steaks in the sauce and heat for 2-3 minutes.
Step 9
Meanwhile, heat the fryer to 180°C and immerse the potatoes again until golden brown.
Step 10
Let the oil drain, season with salt, and serve immediately with the steaks and sauce.
