Description

The key to this mash is a nearly dry base made from boiled potatoes and frozen butter. There should be plenty of butter. A famous chef recommends using equal amounts of butter and potatoes.

Ingredients

  • Ground Black Pepper - to taste
  • Salt - to taste
  • Nutmeg - to taste
  • Whole egg - 2 pieces
  • Butter - 7.1 oz
  • Potato - 2 lbs

Step by Step guide

Step 1

Cut the butter into small cubes and freeze.

Step 2

Peel the potatoes and boil them until cooked. A simple scientific fact indicates readiness: if the potato easily slides off a knife inserted into it, it is ready.

Step 3

Drain the water and let the potatoes dry slightly in the same pot they were boiled in, placing the pot over low heat for a couple of minutes.

Step 4

Pass the potatoes through a fine sieve. Place a skillet over very low heat and add the potato puree to it. Take a silicone spatula, add some frozen butter to the potatoes, and methodically incorporate it as you add more frozen pieces gradually. The result should be a puree with a firm yet incredibly delicate consistency.

Step 5

Season with salt and pepper, add a pinch of nutmeg, the egg yolks, and mix thoroughly once more.
