Ingredients
- Potato - 28.2 oz
- Olive Oil - 2 spoons
- Ghee - 2 spoons
- Rosemary - 2 sprigs
- Garlic - 5 cloves
- Salt - to taste
Step by Step guide
Step 1
Prepare all the ingredients. Preheat the oven to 392°F.
Step 2
First, wash and cut the potatoes: large ones into wedges, medium ones in half, and you can leave the very small ones whole. It's important that all the pieces are the same size, approximately the size of a quarter of a chicken egg.
Step 3
Place the potatoes in a pot of salted water, bring to a boil, and cook for 7 minutes until they are partially cooked.
Step 4
Drain the water, cover the pot with the potatoes with a lid, and return it to the stove on the lowest heat for about 5 minutes.
Step 5
Then, place the potatoes in a colander and shake it a couple of times so that the pieces are coated with a layer of starch.

In a baking dish, combine the melted butter and olive oil.
Step 7
Crush the garlic cloves with a knife while still in their skins and place them in the baking dish. Add the sprigs of rosemary to the dish as well.
Step 8
Lightly heat the baking sheet, mix the contents with oil, and arrange the potatoes cut side up.
Step 9
Place the potatoes in the oven for 30 minutes. Turn them on the baking sheet twice: after 15 minutes and then again after another 10 minutes.
Step 10
Before serving, remove and discard the garlic and rosemary, sprinkle the potatoes with coarse salt, and serve immediately.
