Description
Red wine can be replaced with tonic water (or ayran), the main thing is that it should be carbonated. It will soften the meat significantly. If desired, the onion can be marinated separately in rings to later skewer it with the meat.

- Ocean salt - to taste
- Spanish onions - 2 lbs
- Pork Neck - 6 lbs
- Ground Black Pepper - to taste
- Rosé Dry Wine - 4 fl oz
Step by Step guide
Step 1
Cut the pork into equal pieces, about the size of a child's fist. Place in a large pot.
Step 2
Peel and finely chop the onion, preferably using a food processor. Add the onion to the pot with the meat, season with salt and pepper, and mix well with your hands. Cover the pot with a smaller lid, press down to release the juices, and refrigerate overnight.
Step 3
Two hours before cooking the meat, pour in the wine and mix.
Step 4
Heat the coals. Skewer the pieces onto skewers, pressing with your hand to ensure the meat tightly adheres to the skewer. Grill the meat until cooked through.
Step 5
Serve the shashlik with plenty of greens, a vegetable salad, and red wine.
