- Kefir - 1 qt
- Basil - 3 sprigs
- Ocean salt - to taste

Place the kefir in the freezer until completely frozen.

Then, lay it on a towel and wait for about 10 minutes.

Cut open the package and remove the kefir.

Line a strainer or colander with two or three layers of cheesecloth.

Place the kefir inside.

After 7-8 hours, when the kefir has completely thawed, squeeze out the excess moisture.

Transfer the resulting cheese to a suitable storage container.

Finely chop the basil (do not use the stems).
Step 9
Grind the salt to a powder using a coffee grinder.
Step 10
Add salt to the cheese mixture.
Step 11
Incorporate the basil into the cheese.

Mix thoroughly and serve.
