Description

The rolls were prepared in our kitchen by John Smith, the executive chef of American Bistro.

Ingredients

  • Rice - 17.6 oz
  • Water - 17 fl oz
  • Sugar - 6.3 oz
  • Rice Vinegar for Sushi - 7 fl oz
  • Salt - 0.7 oz
  • Kombu Seaweed - 0.4 oz
  • Philadelphia Cheese - 10.6 oz
  • Avocado - 2½ pieces
  • Cucumbers - 4.6 oz
  • Smoked haddock fillet - 21.2 oz
  • Wasabi - to taste
  • Pickled garlic - to taste
  • Soy Sauce - to taste

Step by Step guide

Step 1

Prepare all the ingredients.

Step 2

Rinse the rice under cold running water until the water runs clear.

Step 3

Rinse the rice and add water in a 1:1 ratio. Cook in a saucepan over low heat, covered, for 20 minutes, then let it steam off the heat for another 10 minutes. Alternatively, you can simply use a rice cooker.

Step 4

Mix the sugar, salt, and vinegar until the sugar is completely dissolved.

Step 5

Rinse the kombu under running water and add it to the sauce.

Step 6

Weigh the cooked rice to determine the amount of dressing needed. For every 1 kg of cooked rice, you will need 250 grams of sauce.

Step 7

Then stir again and let it sit for another 10-15 minutes to allow the rice to cool.

Step 8

Cut the avocado in half, remove the pit, peel the skin, and slice it into thin strips. Cut the cucumbers into similar thin strips.

Step 9

Clean the salmon fillet, remove the skin, and slice it into pieces about 1 to 1.5 mm thick using a sharp knife.

Step 10

Wrap the mat in plastic wrap, make several cuts in the wrap to release air. Grease the wrap with a drop of mayonnaise to prevent the rice from sticking.

Step 11

Cut the nori in half and place one half on the mat with the rough side facing up. Spread 80 grams of rice over it, leaving the edge of the nori farthest from you uncovered, and place the rice about 1 cm away from the edge of the nori closer to you.

Step 12

Flip the nori over, then place a strip of cheese, cucumber, and avocado on the nori. Roll it up so that the rice is on the outside and the nori encases the filling. Do not compress the roll too tightly. Repeat the same process with all the ingredients.

Step 13

Place the slices of salmon on top.

Step 14

Cut the rolls into six pieces and arrange them on a plate.

Step 15

Serve the finished rolls with wasabi, pickled ginger, and soy sauce.
