Pickled tomatoes with sweet peppers and onions
Ingredients
- Tomatoes - 4 lbs
- Onion - 2 heads
- Sweet Pepper - 2 pieces
- Dill - 1 bunch
- Garlic - 2 cloves
- Water - 1 qt
- Salt - 1 tablespoon
- Sugar - 4 tablespoons
- 9% Vinegar - 2 fl oz
Step by Step guide
Step 1
Peel, wash, and cut the onion, garlic, and sweet pepper (red or yellow - to taste) in half.
Step 2
Wash the tomatoes and dill (or any other herbs - parsley, black currant leaves, etc.). Place all spices and 1 sweet pepper at the bottom of a sterilized three-liter jar, add the tomatoes, and top with the second sweet pepper and herbs. Pour boiling water over it, cover with a plastic lid, and let it sit for 30 minutes.
Step 3
After half an hour, drain the water into a saucepan, bring it to a boil again, and pour it over the vegetables for another 30 minutes. Drain again, add 100 ml of boiling water, add salt and sugar, and bring to a boil once more.
Step 4
Pour vinegar into the jar, fill it with boiling marinade, seal it with a sterile lid, place the jar upside down, and let it cool for 2 days.
