Ingredients
- Skate Fillet - 2 lbs
- Onion - 19.4 oz
- White bread - 8.8 oz
- Milk - 5 fl oz
- Lard - 12.3 oz
- 10% cream - 25 fl oz
- Wheat Flour - 3.5 oz
- Chicken Egg - 4 pieces
- Breadcrumbs - 7.1 oz
- Vegetable Oil - 1 fl oz
- Mashed Potatoes - 2 lbs
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Dice 300 grams of onion into small cubes and sauté in vegetable oil. Soak crustless white bread in milk.
Step 2
Cut the pike fillet and pork fat into cubes, add sautéed onions, bread soaked in milk, and pass through a meat grinder twice. Place in the refrigerator for one hour.
Step 3
Season the minced meat with salt and pepper, add the cream, and whisk by hand. Then refrigerate again for 40 minutes.
Step 4
Whisk the eggs well. Shape the minced meat into a patty, lightly dust it with flour, dip it in the egg, and roll the patties in breadcrumbs.
Step 5
Fry the patties in a skillet on all sides. Serve with mashed potatoes.
