- Pike Perch Fillet - 3.5 oz
- Clarified Butter - 0.7 oz
- Wheat Flour - 1.1 oz
- Sugar - 0.1 oz
- Chicken Egg - ½ piece
- Sour Cream - 0.9 oz
- Herbs - 1 bunch
Step by Step guide
Step 1
Mix the flour with sugar, sour cream, and egg yolks, knead well and combine with the whipped egg whites.
Step 2
Cut the fish (without bones and skin) into 4–5 thin pieces and, using a fork, dip each piece of fish into the batter and lower it into the boiling oil. Fry until cooked, serve sprinkled with chopped herbs.
