Pilaf with Chickpeas
Ingredients
- Deodorized refined vegetable oil - 3 tablespoons
- Carrots - 3 pieces
- Basmati rice - 10.6 oz
- Vegetable Broth - 23 fl oz
- Chickpeas - 7.1 oz
- Almond Flakes - 0.9 oz
- Sweet Paprika - to taste
- Asafoetida - a pinch
- Coriander Seeds - to taste
- Cumin Seeds - to taste
- Turmeric - to taste
- Salt - to taste
Step by Step guide
Step 1
Heat the oil in a heavy-bottomed pot (ghee can be used instead of vegetable oil).
Step 2
Sauté the grated carrots and spices.
Step 3
Then add the rice and sauté as well.
Step 4
Pour in the broth (water can be used instead of broth), and add salt.
Step 5
Bring to a boil and cook covered on low heat for about 15–20 minutes.
Step 6
5 minutes before the cooking is done, add the pre-cooked boiled chickpeas.
Step 7
When serving, sprinkle with almond flakes (if almond flakes are not available, you can use cashew flakes or omit them altogether).
