Ingredients
- Meat - 2 lbs
- Parboiled and wild rice blend - 3 glasses
- Onion - 3 heads
- Garlic - 4 heads
- Carrot - 4 pieces
- Pilaf Spices - to taste
Step by Step guide
Step 1
First, separate the meat from the fat and cut it into pieces of your preferred size. Chop the fat into small pieces and place it in a preheated pot over low heat, stirring with a slotted spoon until the fat renders and cracklings form.
Step 2
Slice the onion into half rings and add it to the melted fat, sautéing over medium heat until it becomes translucent. Then, add the meat and fry it until golden brown.
Step 3
Cut the carrots into large pieces and add them to the meat and onion, frying for about 5-7 minutes. Pour in enough water to completely cover the meat. Season with salt, add pepper and spices, and let it simmer for about 15 minutes.
Step 4
Rinse the rice under cold water and soak it (changing the water about 5 times). Peel the garlic cloves, removing the outer skin and roots. Place them in the pot with the meat and then tightly layer the rice on top, pressing it down with a slotted spoon. Add water until the distance from the surface of the water to the layer of rice is approximately one finger's width (about 2 cm). Add salt to taste and spices, cover with a lid, and let it simmer on low heat for 30 minutes.
Step 5
Once cooked, turn off the heat and let the pilaf rest for 10-15 minutes without stirring. Then, mix everything thoroughly and let it sit for another 5 minutes.
