Ingredients
- Lamb Shoulder - 5.3 oz
- Fat Tail Fat - 1.2 oz
- Jasmine Rice - 5.6 oz
- Onion - 1.8 oz
- Garlic - 3 cloves
- Carrot - 1.8 oz
- Dried Apricots - 0.9 oz
- Dates - 0.9 oz
- Prunes - 0.9 oz
- Raisins - 0.9 oz
- Black Cumin (Cumin) - 0 oz
- Serviceberries - 0.1 oz
- Saffron - 0 oz
- Safflower Oil - 1 fl oz
- Water - 8 fl oz
- Salt - to taste
Step by Step guide
Step 1
Cut the lamb into large pieces.
Step 2
Melt the tail fat with vegetable oil, add the lamb, and sauté over high heat for 5 minutes.
Step 3
Slice the onion and carrot into strips, and peel the garlic.
Step 4
Add the onion, carrot, barberry, and cumin to the lamb, add the whole garlic, and sauté over medium heat, stirring constantly, for another 2–3 minutes.
Step 5
Add 250 ml of cold water, salt, and saffron; rinse the rice and place it on top of the meat, pour in the spiced water, and cook on low heat with the lid closed for 15 minutes.
Step 6
Cut the dried fruits into large cubes; remove the pilaf from the heat, stir, place the dried fruits on top, and cover with a lid; let it rest for 5 minutes.
Step 7
Stir the pilaf and serve.
