Pilaf with Pomegranate, Dried Fruits, and Thyme
Ingredients
- Butter - 2 tablespoons
- Spanish onions - 1 head
- Basmati rice - 1 cup
- Chicken Broth - 1½ cups
- Dried Apricots - 2.8 oz
- Chopped almonds - ½ cup
- Pomegranate Seeds - ½ cup
- Coarse Salt - to taste
- Chopped Sage Leaves - 1 tablespoon
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Melt the butter in a saucepan over medium heat. Add the finely chopped onion and sauté until soft for 4–5 minutes. Then add the rice and sauté for one minute.
Step 2
Pour in the broth and bring to a boil. Cover with a lid and reduce the heat. Cook until done for 15–20 minutes.
Step 3
Remove from heat and fluff with a fork. Stir in the chopped dried fruits, pistachios, pomegranate seeds, and thyme. Season with salt and pepper and serve immediately.
