Ingredients
- Butternut Squash - 12 oz
- Onion - 12.7 oz
- Orange Bell Peppers - 1 piece
- Bay leaf - 1 piece
- Olive Oil - ¼ glasses
- Long-Grain Rice - 1 glass
- Water - 2 glasses
- Roasted Peanuts - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Heat a skillet over medium heat, add oil, and then add diced pumpkin, chopped red bell pepper, finely chopped onion, and a bay leaf. Add 1 teaspoon of salt and 0.25 teaspoons of pepper. Cook, stirring, for 8-10 minutes until the vegetables are golden brown.
Step 2
Add the rice, stir well, and pour in the water. Bring to a boil, reduce the heat, cover with a lid, and cook for about 20 minutes, until the rice and vegetables are tender and the liquid has evaporated.
Step 3
Remove from heat and, without lifting the lid, let it sit for 10 minutes. Season with salt and pepper, and add the seeds.
