Ingredients
- Wild rice - 0.3 cups
- Long-Grain Rice - 1 cup
- Onion - 1 head
- Olive Oil - 2 tablespoons
- Dried Chinese mushrooms - 12 pieces
- Peanut Sprouts - 1.6 oz
- Water - 1.6 cups
- Dry White Wine - 0.3 cups
- Chicken Broth - 1 cup
- Dried Barberry - 1 teaspoon
- Salt - 1 teaspoon
- Ground Black Pepper - ¼ teaspoon
Step by Step guide
Step 1
Soak the mushrooms in warm water for a while until soft. Then drain (reserving the water), squeeze out excess water, and cut into thin strips.
Step 2
In olive oil over medium heat, sauté the finely chopped onion until soft, without browning. Pour in the wine, increase the heat, and let the alcohol evaporate for a minute. Add the reserved mushroom water and broth. Then add the wild rice, tarragon, salt, and pepper. Bring to a boil, reduce to a very low heat, cover, and cook for 20 minutes.
Step 3
Then add the white rice, mushrooms, and peanuts. Adjust salt if necessary. Bring to a boil again, reduce to low heat, cover, and cook for another 20 minutes, until all the liquid has evaporated.
Step 4
Remove from heat, fluff with a fork, and serve immediately.
