Pizza with Asparagus and Eggplant
Ingredients
- Wheat Flour - 15.9 oz
- Water - 10 fl oz
- Olive Oil - 2 tablespoons
- Dry yeast - 1½ tablespoons
- Asparagus - 15.9 oz
- Eggplants - 7.1 oz
- Ham - 4.9 oz
- Grated Pecorino Pepato Cheese - 4 tablespoons
- Ground Black Pepper - to taste
- Melted Cheese - 4.4 oz
Step by Step guide
Step 1
Prepare the pizza dough. To do this, mix the oil and hot water, add to the flour and yeast, and stir. Place on a floured surface and knead for 5–8 minutes until the dough becomes elastic and stops being sticky. Place in an oiled bowl, cover with plastic wrap, and set in a warm place for about 1 hour until it doubles in size.
Step 2
Cut the asparagus into 7 cm pieces, boil it in water for about 2 minutes until bright green, then drain and rinse under cold water.
Step 3
Wash the eggplants, peel them, cut into slices, fry, and mash with a spoon until it becomes a paste.
Step 4
Grease a baking sheet with oil, preheat the oven to 428°F. Knead the risen dough for a couple more minutes and roll it out.
Step 5
Spread the eggplant mixture over the dough, then add the asparagus, diced ham, and diced mozzarella. Sprinkle with Parmesan and pepper, and drizzle with olive oil. Bake for 12–15 minutes until golden brown.
