Ingredients
- Wheat Flour - 17.6 oz
- Chicken Egg - 1 piece
- Milk - 10 fl oz
- Sugar - 1 teaspoon
- Salt - ½ teaspoon
- Dry yeast - 0.4 oz
- Vegetable Oil - 2 tablespoons
- Tomatoes - 2 pieces
- Hard Cheese - 5.3 oz
- Semi-Smoked Sausage - 2.8 oz
- Pickled capers - 2.1 oz
- Onion - ½ piece
- Dill - 1 bunch
- Mayonnaise - 1 tablespoon
- Passata Tomato Sauce - 1 teaspoon
Step by Step guide
Step 1
Warm the milk to about 104°F. Add the dry yeast (it's better to choose a trusted brand) to the milk, mix well, and let it sit for 30 minutes. After this time, the milk should foam.
Step 2
Sift the flour to aerate it.
Step 3
Make a well in the center, pour in the milk, and crack in the egg (at room temperature). Add sugar, salt, and oil.
Step 4
Knead the dough. It should be soft and slightly sticky to the hands. Cover the bowl with plastic wrap and leave the dough in a warm place for 1 to 1.5 hours (I usually place it near a radiator or in the oven at 122°F with the door open).
Step 5
When the dough has tripled in size, it is ready. At this point, it's time to preheat the oven. It should be heated to 482°F (the higher the temperature, the fluffier the dough will be).
Step 6
Prepare the filling. Choose ingredients to your taste. I have tomatoes, bacon, capers, onion, and dill.
Step 7
Grease a baking sheet with oil and sprinkle with flour. Shape the dough into a large flatbread (if the oven is small, you can make two flatbreads and, consequently, two pizzas). Do not flatten the edges to keep the air in. Spread the dough with sauce: 1 teaspoon of tomato paste mixed with 1 tablespoon of mayonnaise.
Step 8
Layer the filling, remembering to add a bit of grated cheese to each layer.
Step 9
Finally, generously sprinkle all with grated cheese. Bake the pizza for 6 minutes at 482°F on the top rack of the oven (the setting should be top and bottom heat).
