Pizza with Broccoli Rabe, Fried Onions, and Olives
Ingredients
- Onion - 1 head
- Salt - to taste
- Ground Black Pepper - to taste
- Olive Oil - to taste
- Thyme - 2 stems
- Broccoli - 1 bunch
- Garlic - 1 clove
- Chili Flakes - a pinch
- Pizza Flour - 14.1 oz
- Pitted olives - 16 pieces
- Melted Cheese - 4.2 oz
- Lemon - 1 piece
Step by Step guide
Step 1
Preheat the oven to 374°F.
Step 2
Finely chop the onion and transfer it to an ovenproof skillet. Season with salt, drizzle with olive oil, add thyme leaves, and mix. Place in the oven for about 30 minutes until the onion is soft and golden.
Step 3
Meanwhile, rinse the broccoli leaves well, trim the bottom of the stems, and cut into medium pieces. Peel and mince the garlic.
Step 4
Heat some olive oil in a skillet, add the broccoli and red pepper flakes. Season with salt and pepper. Sauté over high heat, stirring, until tender. Add the garlic and sauté for another minute.
Step 5
Remove the onion from the oven and increase the temperature to 230–464°F.
Step 6
Roll out the dough into a circle about 30–35 cm and place it on a baking sheet. Brush with olive oil. Sprinkle with grated cheese, then add the onions, followed by the broccoli and sliced olives.
Step 7
Drizzle with olive oil on top and bake for 5–10 minutes until the dough is cooked.
Step 8
Remove the pizza from the oven, lightly drizzle with lemon juice, and serve.
